Swiss Chard Potato Salad


This week our delivery included Swiss Chard.
Hmmm. What to do with Swiss Chard?

I altered a recipe I found that was originally printed in the American Profile section of the paper. 
It's an Italian Potato Salad with Swiss Chard.

I really want to reduce carbs and the sugar spike potatoes brings, so I flipped the recipe around, 
and made it mostly Swiss Chard with a little bit of potato.
I also altered the amount of seasoning to our taste.
Swiss Chard with a Little Bit of Potato
2 potatoes
1 really big bunch of Swiss Chard, or 2 small bunches
4-6 green onions, sliced
2-3 garlic cloves, minced*
1 T. vinegar
1/3 c. olive oil
4 dried red peppers, crushed
salt to taste



Cut potatoes into approximately 1/2 inch size pieces. (Do not peel potatoes). 
Boil potatoes in a large pot until almost tender. 
When potatoes are almost tender, add Swiss Chard to the pot.
You could cut the Swiss Chard into manageable pieces before you add them to the water if you like. 
Boil with the potatoes for just 1 to 2 minutes until the leaves are wilted.
Meanwhile, mix onions, garlic, vinegar, olive oil, red peppers, and salt in a big mixing bowl. 
Drain potatoes and Swiss Chard and add to the mixing bowl with the other ingredients. 
Mix gently. Serve immediately. 
*Fresh garlic is really a great health boost!
