Spinach Campfire Breakfast Burritos


This post is less recipe /more encouragement to be daring when cooking over a fire. 
That's right, a fire...not propane. Campfires are not limited to hot dogs and roasting marshmallows.
We took our farm fresh eggs and fresh spinach from our first CSA delivery this year on our camp out
and created some delicious and spicy breakfast burritos.

It helps to have sturdy camping egg holders to protect the eggs in the cooler.
We started with spicy sausage and hot red peppers. The red peppers are from our farmers too. 
The red peppers were from our surplus toward the end of last season. We diced and froze them. 
They worked great!  After the sausage cooked through, we added the eggs. 
After those cooked through we heaped on the spinach. 


Spinach cooks down quite a bit, so the more the merrier! 


Our locally produced tortillas were wrapped in foil and warming off to the side of the grate. 



Slowly stir together the ingredients as the spinach wilts and cooks.


Campfire breakfast burritos with as many local ingredients as possible!
