Green Tomatillo Salsa - Salsa Verde


CSA - Community Supported Agriculture - Our delivery from our farmers this week contained cilantro and green onions - time for salsa! We love tomatillo salsa (salsa verde). It is such a refreshingly cool taste - with a kick of jalapeno too. This is my sister's recipe that she developed after working in a Mexican restaurant. It is super easy and perfect for summer.



If you have never cooked with tomatillos I have included a few pictures. Tomatillos are usually available in any grocery store, although I have never seen them grown locally in the Midwest as they are a zone 10 to 11 plant, so this is a veggie that you will need to look for outside your local growing area. Limes also are not a locally grown Midwestern item, but other than that load up on the local garlic, green onions, and cilantro for this recipe. If you are making this in early to mid summer, you could substitute bulb garlic with garlic


First you will need to peel the papery skin from the tomatillos. This is easy to do, but it is a sticky job! See the pictures below.


Add the tomatillos into a big pot. Cover the tomatillos with water, and set to boil. Once the water begins boiling, they only need to cook for about 3 minutes until they are tender. Drain the tomatillos and let them cool to at least mildly warm. You will be pureeing everything in a food processor or blender, so if the tomatillos are too hot it may cause a problem with the lid of the machine you are using. You don't want exploding surprises!
Prep and chop the other ingredients while you wait for the tomatillos to boil and then cool. Puree everything in a blender or food processor, and you are done! I always double the recipe so that our family has plenty of this tasty salsa.

  • 1 lb. tomatillos
  • 4 scallions, whites and 6” greens
  • 1 t. minced garlic
  • 1 ½ c. cilantro
  • ½ - 1 t. salt
  • 4 T. lime juice
  • 1 t. seeded (or with seeds) minced jalapeno

Peel tomatillos. Place whole tomatillos in saucepan, cover with cold water, boil 3 minutes or till soft. Drain and cool. Add everything into blender and puree.
